What's for dinner?

Ha! That's why I didn't jump on it first. Maybe you could do a lasagna or a casserole type dish on the grill. Smoked ziti and meatsauce?

Edit! We are so dumb. ...

....smoked mac 'n' cheese with bacon!!!!
Eureka!!! That's it!!

I hadn't done anything with that pan since I brought it home. Since you mentioned mac n cheese and the coals on the grill were still hot, I scrubbed the pan and rubbed it down with a little bacon grease, and have it seasoning on the grill as I type this. I can see mac n cheesey goodness in the near future.

BTW, did you ever see my famous mac n cheese picture?

Don't think so, but often whiskey is involved when I am browsing so things get missed and forgotten on occasion.

Check your phone.

Tonight, were having Whole Wheat Pasta, Broccolini, Grilled Sweet Sausage, Sun dried tomato's, garlic and oil. Topped with imported Romano cheese.

Burgers, dogs and asparagus on the griddle. Mainly because it was still out from pancakes this morning and I didn't feel like pulling out the little propane grill my dad has in the RV. Rumor is there are baked beans being heated up inside as well.

Well you have made this fatboy twitch. Even though I am a staunch turnip green fan those collards look amazing. I appreciate the fact you took the time to de-vien and chop them and the pot likker has the proper sheen of fat. One of my favorite things about fall/winter is eating greens.

Back off on the cooking time for the cobbler and you'll have it. I really like the Kickin Chickin on the wings. Looks good.

@Jim1392 how do you prepare your baked asparagus?

We usually do ours this way:

We usually get the size asparagus... I guess you could say medium size... about the diameter of a pencil (maybe a little bigger). Wash asparagus then find the snapping point closest to the root end and discard the tough root end. Place tips (if you will) on a cookie sheet, and pour some Olive oil over the asparagus and rub in to coat all areas. Sprinkle sea salt, fresh cracked pepper, and garlic powder (all to taste). Place in pre-heated oven @ 425* for about 5 minutes.... you can play with the time some +/- to achieve desired tenderness. Remove from oven and lightly sprinkle Parmesan cheese on asparagus (again, to taste) and place back in oven, turn heat off, leave in oven for about a minute or so then remove from oven.

What ever you do, do not put one on top of your head.... your tongue will beat your brains out trying to get to it! lol :)

We do it close to the way you do it. She put's them in a baking pan at 325 for about 20 to 25 minutes depending how fat the stalks are. She drizzles olive oil on them with a pinch of salt and pepper. We used to melt some Romano cheese on them when they are done for few minutes just to melt it but since I'm trying to cut calories we've taken the cheese portion out of it.

Trying to get better at using our oven since I normally would be using the grill. Put some bone in/skin on chicken breast over potatoes, celery, onions, and carrots mixed with oil, salt and pepper. 375 on convection until chicken was done, about 45 minutes. Was good and provided plenty of leftovers for me and the wife. Never thought I would appreciate a convection oven, it does a great job of browning meat and keeping it tender.20170923_115159.jpg 20170923_131123.jpg

Tonight, Grilled Sausage, Sauteed Broccoli in Oil with Roasted garlic. Then mixed with whole wheat pasta. And then good old Romano Cheese.
