What's for dinner?

Two pork loins tied together, oil, salt and pepper. Browned them with diect, then moved them to finish indirect with a chunk of wood on the coals. My wife said it had too much of a smoke flavor but I thought it was great. By far it was the best tasting meat from the weber to date. I really am enjoying charcoal again after use gas for so long.

I like to take a pork loin and split it open like a sub bun. Inside, I'll spread apple butter or apple sauce and lay some apple slices in there, too. Tie it up and cook on the grill with indirect heat. It has an awesome flavor when made this way.

Tonight, Sweet Sausage cooked on the grill, garlic and olive oil, Broccoli Rabe, Sun dried tomato's, Whole Wheat Pasta, Topped with Romano cheese.

We have been smoking salt for a while now. Today we smoked peppercorns. Oh my, can't wait to top a dish with fresh cracked, smoked pepper.
 
Tonight, Scallops coated in flour, cooked in olive oil and garlic. Then put on top of whole wheat pasta with Romano Cheese. The picture is from the last time we had it but it looks the same tonight. scallops 007.JPG
 
Tonight, Baked Pecan coated Tilapia, Brown Rice, Bushes Beans, and leftover Broccoli Rabe.

We are a few days late, but today's lunch was for my daughter's 17th birthday. It was grilled bone in prime rib steaks. Yes, they are THICK and good!

Tried out my deer ribs recipe tonight and I believe it was a hit. Put ribs in pressure cooker for 30 minutes with just water, salt and pepper. They came out falling off the bone tender. Next, on the grill for 5-10 minutes per side and then some barbecue sauce and let that brown on each side. For a side, asparagus sauteed in butter with salt and pepper. Simple meal, but good.

Tonight, Chicken rollers stuffed with Spinach , Feta cheese, and sun dried tomato, Homemade Macaroni and Cheese, and Broccoli Rabe.

I don't know how a dinosaur egg tastes, but I can tell you about this egg! Let it sit for 5-10 minutes so you can handle it, cut off a slice and cover in butter and that is some good eating! The crust has a crunch to it and the inside is hot and soft and melts in your mouth. There have been many times I'll make this and it ends up being the entire meal. I also make barbecue chicken in a pot on top of the stove with Carolina Treat sauce and after cooking the sauce thickens like gravy and when you put it on top of this bread, oh my, it's hard to stop eating it. Matter of fact, you've given me an idea for supper tonight, barbecue chicken.
 
With the bread, I cheat and use a Sunbeam bread machine. You can see the bottom of it in the picture. Makes it very simple. Put all the ingredients in the pan, turn it on and 3 hours later, fresh bread! I even use a simple bread recipe, but slightly modified for my particular taste.

My wife has been babysitting her great nephew for the last few months while his dad is working and so I get the pleasure of cooking a large meal for up to 6 people every week night. I try to cook meals that have protein, starches and carbs (two growing boys in the bunch). The one thing I don't do is dessert. I'm not big on sweets, so I don't get creative with that area. I do enjoy cooking the meat and bread!
