What's for dinner?

First time doing ribs on a weber. Did 4 hours at 250. They were good, but might of needed more time since they were tough. For instance, the bones were not loose yet. Definitely need to work on my timing. Going to have leftovers tonight and will try heating them in the oven for an hour or so.

Dry rub the night before.

Yep, the ol' Texas Cheat, 3-2-1. After slow cooking for about 3 hours, wrap them in foil and it will cook and steam at the same time. Fall off the bone ribs.

After two more hours at 250, ribs were awesome.
 
Tonight, Charleston crab cakes sandwiches on sandwich thins, with American Cheese, my wife's Mayo & Ketchup spread, Cole Slaw, Alexia Fries and Bushes Beans.crab cakes 002.JPG

Looks good needed a fried egg on top! Traditionally it is made in stone bowls and you crack the egg right on top and then put it under the broiler to crisp the egg a bit! BimiBap is the bomb and very flexible with ingredients.
 
19oz Ribeye grilled to perfection topped with a blue cheese compound butter, with garlic/mushroom cauliflower mash, and a power greens salad topped with olives, goat cheese, anaheim peppers, pomegranate seeds, and an avocado oil garlic citrus dressing...

I come from Spanish and Mexican bloodlines with Puerto Rican aunts married in.
So I grew up on a lot of Mexican red rice, paella and PR rice. Not to leave out homemade tortillas...

I'm lazy, so I just throw together what ever I have that reminds me of growing up with Abuella and Aunt Myrtle. :D
