What's for dinner?

How long and what birquetts are you using? I need to get me one of those vortex cookers.
Just regular ol' Kingsford in the blue bag. Get the grill heated up, put the wings on, wait 1 hour, done. I put a couple of chunks of pecan wood on there for some smoke flavor. After the wings came off I did pull out the vortex and spread the coals around and grill some corn.
The vortex puts out some amazing heat.

Thanks for the info. I did not have much luck with getting heat from the regular kingsford, but didn't have a vortex either.

Tonight, Cauliflower baked with Caramelized Onions, Garlic, and olive oil. Then mixed with Whole Wheat Pasta. Romano Cheese.Cali & onions, 004.JPG

For this Friday's fare:

Salmon filets sauteed in a bit of light olive oil (seasoned with herbs de provence; light dill weed; s&p), butter and lemon to make a sauce. Mushroom & Parmesan risotto. Trick is to get the temperature just right to put a bit of crust on the salmon without cooking it through such that it dries out.

Sliced up some of the onions and leftover meat and fried it in a pan. Add some plain noodles barbecue sauce and a little bit of mozzarella cheese. It was incredibly good

CZfool's version of chicken riggies tonight! And I nailed it.

IMG_1193.JPG
Saute some chicken pieces until they are white then throw in some red pepper slices and shalots.

IMG_1194.JPG

Use whatever sauce you like. I like something with a little kick. Then add some hot cherry pepper slices. If you don't like spice just use normal pasta sauce and sweet peppers. Wimp.

Carmelize the shallots a little and make sure the chicken is done.

IMG_1196.JPG

Throw it all together while the water is boiling for the pasta.

IMG_1199.JPG

Add some cream cheese to thicken the sauce and make it a little creamy. I add red pepper flakes before this so I can sweat a little while I eat.

Dump a bunch over some rigatoni and enjoy!

Is the Wide Aperture grill available the same places you can get the Vortex? Gonna hafta try that setup soon...
