They were amazing. Kids ate them like candy. I just whipped it up but IIRC, looked like this.

Pint jar stuffed with:
One sliced red onion
One clove garlic smashed
1/4 tsp oregano
1/8 tsp garlic pepper

On stove in small pot:
1:1:0.5 ratio of water:Apple cider vinegar:sugar
1 tsp salt

Bring to boil, whisk and then pour over contents of jar. Cool, cover and refrigerate. Good 24 hours later. Maybe sooner.

Crazy part is blue color comes out of onion and I to garlic leaving it blue and onions pink.

Today is my daughter's 12th B'day so she has requested my wife's pizza fondue. Homemade breadsticks that can be dipped into a fondue consisting of ground sausage, a few different kinds of cheese and tomato sauce. We'll throw together a veggie tray as well. The requested cake was a chocolate cake with mint frosting and crushed Andie's candies on top.

I'll follow all that with some rye! :D
 
Tonight, Scallops coated in flour, cooked in olive oil and garlic. Then put on top of whole wheat pasta with Romano Cheese.scallops 007.JPG
 
Prime Rib, baked potato, and salad with Bleu cheese dressing from Pavilion. Please, please God let me not have an allergic reation. It was so delicious.
 
Tonight, Grilled hamburgers, American Cheese, Alexia fries, Bushes Beans. No pictures since we all know what a Burger looks like. ;)
 
Attempted to smoke a butt and ribs on the Weber Kettle. Put butt on first followed by ribs a few hours later. Had the temperature way to high thanks to bad probe placement. After 4 hours of cooking, turns out the probe had been resting on the meat and the grilling temp was much higher than I thought. Butt hit 205 quickly, but was still good. Will try again with keeping the temp around 225 versus 350. Ribs were good too. No finished pics because I was busy stuffing my face, I mean pulling bbq.

That drip pan probably saved your bacon. Literally! There are a lotmof people cooking at higher temps these days and still getting good results. I've seen some of the competition guys on Tv doing brisket at 300 and up. With the right set up you can get results lots of ways I guess.
 
Big Daddy Mexi-Melt Boats!

Just picked my first Big Daddy peppers out of my garden and figured I’d have them for lunch.

Ingredients:
Ground chuck
Taco seasoning
Salsa
Mexican cheese blend
Big Daddy peppers

Brown the meat.
Add taco seasoning and simmer 3 minutes.
Drain excess liquid.
Add salsa and a handful of cheese and mix.
Place peppers on baking sheet sprayed with Pam.
Fill peppers and top with more cheese.

Place in oven on low broil for about 5 minutes.

About 45 minutes start to finish.
Add a handful of BBQ Fritos and you get:

Very nice. I do stuffed peppers on the Big Green Egg and the smoke flavor adds something really good. If you have a charcoal grill or smoker try them on there sometime.
 
Tonight, Hot dog sandwiches, 5 Grain bread, grilled hot dogs, Peppers & onions, Mustard & Ketchup, Waffle fries. Bushes beans on the side. We only have it a couple times a year only because of the salt in the hot dogs., and my doctor telling me to lay off of salt. But its worth it.View attachment 63713

Fajita Tuesday:

Skirt steak in marinade, pico de gallo made, tortilla dough resting, black beans with chorizo simmering, tostones to be prepped shortly. The avacados were well past their prime therefore, no guacamole (spouse is not pleased).

It smells so good, I can't wait.

That some fancy stuff. I sliced a little meat off yesterday's tri tip, sauteed some peppers and made fajitas. That's how I roll. A big meal followed up by leftovers with a different twist. And thanks to the vacuum packer a big piece of meat is the gift that keeps on giving.
