What's for dinner?

That some fancy stuff. I sliced a little meat off yesterday's tri tip, sauteed some peppers and made fajitas. That's how I roll. A big meal followed up by leftovers with a different twist. And thanks to the vacuum packer a big piece of meat is the gift that keeps on giving.

Nothing wrong with that. The recipes for the fish is actually really easy. It looks fancier than it is.

I just grabbed some more frozen red snapper from Lowe's on sale. I just put some Caribbean Jerk seasoning on it and give it a light fry in olive oil. Really good stuff with a side of some veggies.
 
Tonight, Charleston crab cakes sandwiches on Whole Wheat Sandwich Thins, with American Cheese, my wife's Mayo & Ketchup spread, Cole Slaw, Alexia Fries and Bushes Beans.

We've eaten spicy stuff 3 nights in a row. We're giving our stomachs a break and having steaks, baked taters and steamed asparagas tonight.

Picked the chanterelles out of the side yard and sautéd them in brown butter and bacon fat. Served them on a NY Strip with a loaded bake potato and a veggie medley. Paired it with a nice Stags Leap CA Cabernet.

Tonight, Cauliflower baked with Caramelized Onions, Garlic, and olive oil. Then mixed with Whole Wheat Pasta. Romano Cheese.Cali & onions, 004.JPG
 
Went to produce stand yesterday.

Meatless Friday. Raosted cauliflower enchiladas with poblano cream sauce and Caesar salad.

Fresh tomato sauce in the canner too. There will be some Italian on the menu next week.
 
Lazy again...

Black and blue salad (leftover steak and blue cheese dip) along with scollaped tomatoes. Grilled plums over vanilla ice cream.

Visits to produce stand result in produce heavy meals.

Mashed potatoes, steak, serrano peppers, sauteed onions pizza.
 
Just cleaning out the fridge: barbecued chicken with about four layers of sauce cooked over charcoal, a couple of brats, corn, lima beans, and ice-cold watermelon.
 
Butter chicken, royal basmati and palak paneer.

Just juiced half of a watermelon. Some yummy margaritas coming later this week.
 
Left over baked ziti and meatballs. But just a little. Experiencing a little Qdoba's revenge this afternoon. Went to the store to buy toilet paper and air fresheners. You should have seen the cashiers face. :eek:

I gotta say I am jealous you were able to find chanterelles in decent shape. This time of year it is nearly impossible to find any that are not eaten up with bugs.

Pork tenderloin: salt, pepper, Herbs de Provence; sear on two sides in cast iron skillet with just a bit of light olive oil; add vidalia onions (I like to cut them along the grain so that they have a julienne effect rather than diced) and a few cloves of garlic and finish cooking in the oven, about 30 mins total at 350-F. About 10 mins out, add some (i) apricot preserves or (ii) cherry preserves.

Salad in summer; potatoes au gratin in winter. A good wild rice mix goes nicely also.
 
Nacho Tuna Salad

I thought this up on the spur of the moment for tonight’s supper.

Ingredients:
Canned tuna in water (drained)
Nacho Cheese Doritos
Shredded cheddar cheese
Franks Red Hot Buffalo Sauce
Sweet salad cubes
Cherry tomatoes
Frozen green peas (thawed)
Onion powder
Paprika
Mayonaise

Mix tuna and all other ingredients together in bowl. Line second bowl with Doritos.

Transfer tuna salad into bowl on top of Doritos. Sprinkle with a bit more paprika and cheese.

Enjoy. I just used the Doritos as scoop for the tuna salad. 2 Cans of tuna gave me enough left over for lunch tomorrow.
