Went to Mateo in Durham...

Started with some pan con tomate, olives, and seasoned almonds... and cava...

Then some chorizo wrapped deviled eggs(like take on Scotch eggs) and skewers of shrimp, chorizo, manchego, anchovy, and pickled veggies.

A little vino tinto to fill the glasses and on to the tapas...

Patatas bravas, beet carpaccio, a brisket dish topped with a crawfish remoulade, fried chicken croquette, veal sweetbreads with pistachios capers and mushrooms...

and my favorite dish there... Beef marrow in the bone with short rib BBQ enoki mushrooms and crostini...

Went shopping today. Found these little 1.25# packs of Whalburger Sliders on sale for $2.

So I made a batch of fathead dough and cooked them up... Served with some pork rinds and french onion dip...

Breakfast for dinner tonight... Yum...

Spinach, shallots, pepper, and cream cheese omelettes with tomato and avocado, bacon and hot sausage links...

I really should stay out of "here" during Lent, but for tonight shrimp and mushroom polonaise:

  • get some wild and/or brown rice cooking;
  • heat butter and olive oil (one can mix in a bit of flour if one likes a thicker sauce);
  • sautee mushrooms and scallions (or shallots);
  • add sherry (or madeira);
  • add shrimp, cooking well through until pink;
  • add sour cream and parsley (heat just to simmer, but don't let boil);
  • serve over the rice.
 
Finished goods. Best chicken I have ever cooked. Dipping sauce was just Ok. Not enough heat, and a little too much cilantro. Added some green hot sauce and made it better.

Not tonight but the other night I had a medieval themed dinner party! Some of the highlights were meat pies, bone in pork roast and homemade bread. Also had smoked turkey legs, whole chickens, roasted veg, braised cabbage, salad with gingerbread cake and poached pears for desert.

Last night, Scallops coated in flour, cooked in olive oil and garlic. Then mixed with whole wheat pasta and topped with Romano Cheese.

Chopped up bacon and cooked it. Used the grease to toast fresh chopped garlic and wilt fresh spinach.
Put the marinated chicken tenderloins on the grill, boiled noodles, added the spinach/garlic/bacon to some alfredo and heated it up.
Voila...dinner is served lol
