I smoked a few Butts to give away for "presents". Christmas dinner was a standing rib roast that I do every year. This was the first time I tried it on the smoker, it was a winner!
 
85A2F6B1-A210-4575-87D6-A9D52932CD1B.jpeg Smoked a chicken last night and rubbed in rub some chicken with a stick of butter shoved up its butt. I ate the legs wife ate the wings i peeled all the skin off she chopped the rest up she just pulled her homemade chicken casserole out of the oven.

Have some collards going and will serve this with some smashed potatoes. Pork Roast.

Blackened Bone in Pork Chop with Cannellini Beans and spinach.
 
Rack of lamb tagine, couscous, citrus salad with goat cheese.

Dang, there is no saffron. Arrghhh!

A ethnic market tour is on the agenda for next week.
 
kibble in a bowl on the floor. to be fair, my bowl at least says "#1 dog" on it...a step above those other must in this house.
 
And if double fisting is good, triple fisting is the best... Margarita, tequila, and Modelo...

Old fashioned comfort tonight. Beef and barley soup, Waldorf salad and parker house rolls.
 
Stopped by The Butchers Block in Lexington and they had dry aged flank steak.

Half of it disappeared before I could snap the after pic. Made zucchini bites with balsamic, honey and goat cheese for a side.
 
Taco pockets. Just a different take on tacos. Instead of loose ground beef taco meat, make hamburger patties with the same seasoning. Get the bigger burrito soft soft flour tortillas and place a burger patty in the middle. Top with normal taco toppings and fold the sides of the tortilla up the best you can.
 
First cook in my Valentines Day gift from my wife of almost 20 years! A Staub enameled cast iron pan. Chicken Cacciatore. I am going to serve it with mashed potatoes and some sauted carrots and baby kale.

Pan seared halibut over sautéed baby kale & carrots. Served with a side of cannellini beans and a balsamic reduction.

All done. Went 165 for 2 hours for the skinnier sockeye pieces. Left the fatter King pieces on for about another 30 minutes and cranked to 180. Also basted the sockeye with maple syrup about 1/2 way through.

Plenty to vacuum pack for future meals.
