What's for dinner?

Started a new batch of sauerkraut today. Then made some vegetable stock out of the veggies that were...not at peak freshness. Supper was sweet potato and green bean curry with rice. For a vegan meal (well if I subbed the ghee out with something it would be vegan), curry is so good.

Thin sliced roast venison over rice with roasted brocolli and brown gravy.

I've been trying to make use of the sous vide circulator and searzall that I recently got. I haven't been unimpressed with anything I've done with the combo so far.

Me bride just fixed my favorite, a Pot-O-Bliss.
Over 3 gallons of venison chili with fresh poblano, jalapeño and 10 habanero peppers with plenty of garlic, cumin, onions that were cooked down with the peppers in the drippings from a Boston butt fat that was smoked.

I have not left the house for 6 + days. This is what we have been eating... All of it made at home from scratch. Lots of it out of the chest freezer.

Did Babybacks tonight. Finished them with a little cinnamon and then brown sugar. Experiment successful. Probably could add a touch more cinnamon, but the subtle approach for the first time was a hit. Might try to capture that little red little cinnamon candy taste on a rib.
 
On a whim and from scratch. Not bad really. Needed more salt, more meat and maybe time time bacon on top lol

Spouse surprised me with an immersion circulator last week.

Tonight lemon/garlic shrimp sous vide, porcini and spianch risotto, mixed greens salad w/ lemon vinaigrette and a cool crisp Vermantino

My last Walmart pickup they substituted 12 pack hotdog buns for the 8's we ordered- so instead of letting them go bad, we improvised.
My grandson is here for a few days, he approved...burgerdogs?

Nice. We never had that cut up in Yankee land when I was growing up. I am never sure how to cook them. Smoke, grill, crockpot? I’ve grilled them, but don’t feel like I did them justice. Thinking a nice slow smoke next time with a sweet rub that will caramelize. But I’m open to suggestions.

400 degrees and smother them in bbq sauce repeatedly for 75-90 minutes on the grill

Tonight is pimento cheese/bacon burgers, salad and something else TBD.

Kansas City rub. Wife bought them at Food Lion. My two tall skinny males consumed them like they hadn’t eaten in weeks.
They were actually pretty awesome.

Made a vat of garbage chili... Grass fed ribeye roast, ground beef, and some charred burgers from the grill chopped up with 4 beans and all the rest... Fresh corn muffins, chips and 4 kinds of cheese on top too...

I give you... The Lockdown...

Two 1/3rd pound Kobe Beef patties grilled to perfection, topped with Wegmans White American Cheese, Avocado, Tony Packo's Garlic Pickles, Lettuce Tomato Red Onion, and Duke's & Weber's, on a Nathan's Bun... Accompanied by homemade 8-cheese Mac and Stone Scorpion Bowl IPA...
