What's for dinner?

PORK TACOS!!!!!

I took out some pork butt that I had frozen, heated up a cast iron skillet, dropped in the pork, some butter, tomatillo sauce, and habanero sauce. While that was simmering I heated up a cast iron griddle, brushed bacon grease on some corn tortillas and slapped those puppies on the griddle. While those were heating up I chopped up onions, cilantro, and tomatoes. I then ground sea salt on the onions and tomatoes. Then it was time to construct. Damn it was goooood!!!!!

Smoked some thick-AF Ribeyes on the Traeger with some grilled asparagus and salt crusted baked potatoes, topped with roasted garlic and flake parm-reg and the requisite butter/sour cream...

Broke in a new grill with some pork chops, broccoli, and sweet potatoes. Too busy eating to get pics of the food. Been missing having a charcoal grill around.

J.Betski's made their Ruben Burger for the first time in like a year... I beg the owner for these every time I come in... Best burger in Raleigh, maybe anywhere... Served with his pomme frites... So good...

Went to smoke a rack of ribs and my Pitmaster iq wasn't cooperating. I forgot how much easier smoking was with the pitmaster and not having to mess with working the vents to hold temperature. Smoked bacon wrapped pork tenderloin medallions seasoned with herbs de provence; seared in light olive oil and finished in the oven with sweet onions, garlic, and black cherry preserves.

Started with some potato pancakes and Nuremberg sausage...

Then the smorgasborg for 2... Sausages, sauerbraten, schnitzel, roast pork, and spatzle, potatoes, sauerkraut, and red cabbage...

Smoked some ribs today. First time in a couple years. They were fantastic.

One of my Vendors sent me 2 weeks worth of "HomeChef.com" meals. 3 meals (4 servings per meal) per week.

We've been eating good! And the best thing is the ingredients list and recipes are super easy to duplicate.
Tonight was a roast sirloin w/demiglace reduction, roast red 'taters and green beans.
A couple nights ago was chicken beurre blanc that was killer

NO way will I pay for that service myself..it's ~$130/week! but I'll gladly plagiarize the recipes.
 
My daughter made Italian mac ‘n’ cheese. Pretty sure my arteries have constricted 40%. Hopefully the bourbon opens them up a bit.
