Brined yesterday, injected this morning and seasoned. Skipped out on frying this year. First turkey I’ve ever cooked on the pellet grill / smoker.

The plan is Apple / Maple blend, 300 degrees for just over 3 hours for a 12.1 lb bird.

Love setting outside drinking coffee and cooking. Follow up on how bad or good it turns out. Wife has a ham for backup lol.

Dry brine yesterday, rinsed, seasoned, cooked at 450 uncovered for 40 min, turned breast d I an, in for a other 3 hours at 350. Then two loaves bread and a pie.
Will transport to daughter's place for very late lunch.

One traditional in the oven and one roast on the applewood smoke now.

I'm pretty lame compared to you folks:

I go with "the bag," but put in chopped celery; carrots; onions; and apple as a sort of bed on which to place the turkey. S&P and use orange rind as a coating.
We go with baked potatoes rather than stuffing.
 
Told my mother not to go to any trouble this year. It's only five of us coming to dinner. I can't even eat turkey due to some stupid allergy that has developed over the years. What does she do? Goes and buys a 15 pound turkey and is currently cooking it. I hate the way my body has changed with age. Can't eat turkey or gluten. The ramifications aren't worth it. There'll be plenty of other things to eat. I won't leave the table hungry.
 
Turkey from Bojangles was very good, taste like chicken.
Well, my wife is the cook and she did make an awesome spicy cranberry sauce with adobo and serrano peppers.
Corn bread and broccoli casseroles were very tasty.
 
Just the wife and I so I made a turkey breast roulade. Came out very good.
