I agree on all counts. We're a horse free house though as my old lady grew up raising/showing horses and she's appalled at the idea of it. Of course she says the same thing about the camel meat... gonna have to sneak it into a dish...
 
Love goat & mutton. Good eats & MUCH less resource intensive to raise than cattle. Dunno as I'm hot to try camel, but wouldn't turn my nose up at it, despite their being one of the vilest creatures I've ever encountered.

Would love to find a source to buy rabbit meat.

Didn't know the Saxapahaw General Store served goat. They've got good eats & a killer selection of beers. The aroma of armpit & patchouli can be a bit much sometimes, but nowhere near as aggravating as all the upscale, erstwhile hipsters chasing the next "in" thing.
 
Butcher's Market has rabbit, so does Standard Foods if you're ever in Raleigh...

Not really like squirrel. Groundhog has a sweeter taste.

Like everything else, the key is preparation. Cut away the glands in the back of the legs, the roast the hog until tender.

I'ma hafta go talk to some of the local farmers & see if they have any groundhog problems that they'd like a hand with. Ol' lady will freak out, but the girl-child & I will definitely get our nom on.
 
I've though about eating ground hog many times. Seems legit.

Never had camel or horse either. Never really considered it.

Years and years ago during my 6th week in a high altitude village in Bolivia, I prepared and ate some meat. Never found out what it was. I cut the butt hole out and cooked it with some old taters. When I went into the "kitchen" I had to sharpen a sheet metal and stick knife before I picked up the rear haunches of the animal in question off the dirt floor. Unique experience to say the least.
