My whiskey glasses are causing a short attention span and internet concoctions seem exorbitant.

Do you have a simple brine recipe I can put together tonight for some chicken thighs I plan to smoke tomorrow?

Tanks!

I use this for chicken and pork. May add a little Apple juice for pork

salt water
Orange juice
Lemon juice
Lime juice
Bay leaves
Thyme
Minced onion
Minced garlic

ratios are “what feels right”

I asked the Ms. but she already had downed a bottle of wine. She said:
1 cup of water
1 tablespoon sugar
1 tablespoon salt
Couple of bay leaves
Peppercorn

Nice.

I have salt water, but that's about it.

A whole bottle before 9pm? I thought I had a problem. :p

Thank you!

I did this, but I don't have Bay leaves. I added about a kworter cup of pickle juice, instead.

In the fridge now and will go on the pellet smoker tomorrow.

Pickle juice... Blech.

We are the simple salt brine only. Sometimes put lemon for a clean citrus taste.
Almost always gets an oils spray and Italian season sprinkle.

I brined mine in sweet pickle juice and then pan fried them unbreaded and they were tastie!!!!

Where do y’all get the pickle juice? Don’t eat a lot pickles to have enough juice.

What's wrong with garlic?

I'm going to say nothing is wrong with it, but for me, I prefer regular dill pickles. I grew up eating the ones that were individually packaged and hung near the meat counter in my great aunt's IGA.

These pickles are great, and I assume that's garlic in there.

If what I see there is accurate, there is no difference other than chopped v. whole garlic cloves.

The difference b/t my plain dill and kosher dills is garlic (and a few extra peppercorns). I suppose it depends on some person's recipe from some time ago.
