Briskets on

I went to get one at Costco on Monday to do the same and sadly they were out. Well, there were 2 smallish not so great looking ones anyway. I'm cracked out on that brisket chili now.

You gotta make the drive to stokedale and hit the bi rite. Their meat department is freaking awesome.

Brisket? No problem.

Grab a whole tenderloin, a couple tomahawk ribeyes and a 44 oz porterhouse while you’re there.

Wife bought this brisket tonight. There were still plenty.

Wave when you get there. I live across the street. House with the three trailers in the side yard.

Bring it. It’ll be ready about 6 am.

I always do a 12 hour cook with brisket. It went on at 6. I literally just got finished wrapping it.

Temp was about 145 but it’s more of a feel thing. 5.5 - 6 hours it’s absorbed as much smoke as it’s going to.
 
Tomorrow is a ,pa little short notice, as i have already committed myself to New Years Eve obligations: black eyed peas, collards, smoked pork etc, but I certainly welcome the opportunity for us to become better aquatinted going forward.

p.s. we used to be on each other’s phone contact list, but then my phone went to pieces down old 421. I’m surprised it hasn’t become a source of basement of fiction. You know, like the comic where the guy sees the ad “for a good time, call” and so he does. So they go to an amusement park, to a movie, to dinner, etc, and at the end the guy says, “well, it did say for a good time, didn’t it!’

guess, it’s pm time.
 
Daaaaaayum! Just daaaaayum. I’ve got to get to the next yearly BBQ. I’ve missed it the last couple years for reasons that I can’t been remember! Always a great time with great people and wonderful food.
