We canned this in June. Figured it would be a good time to give it a shot

Yeah. Diana posted in the canning thread. I had forgetting she had posted about the bacon there when it was canned.

She liked it. The bacon flavor wasn’t as strong to me as it would’ve been fresh. The consistency was different. The bacon was very “flaky “ I guess. Meaning it fell apart very easily when cooking. Soon as it got hot it started falling apart when I would try to flip it. It wasn’t as good as fresh bacon, but it was better than not having bacon.
 
Could you share the link where you Canned this or the recipe please? Been wanting to try this for awhile but didn't want to mess up my bacon. $7-$10 lb.

How much did you can? Did you buy bulk somewhere?

I think we got it as markdown from US foods. @Lil D can shed more light on this. I doubt I’d do it with $7/lb bacon.

I don’t think this is the exact video I followed but it’s very close. Only difference is she par-cooked her bacon and I did mine raw. When I do it again I will cook it some first and see if that helps the removal from the jar any.
The bacon used was from US Foods. We found some 10 lb packs on clearance when we went and it was around 10 dollars a pack of memory serves. Wide mouth jars are necessary for this process unless you don’t pack your jars very tight.

Yes it was pretty hard for at least the jar I’ve opened so far. To get it in you are packing it really tight and twisting it so to get it out you are twisting it also. The grease made the parchment paper soft and I have to be careful not to rip the paper and bacon. Im sure it will still be kind of soft if I cook the bacon first but not having all that extra grease in there has got to help.
You don’t have to cook it in paper you can just raw pack it and pressure can it but I wanted slices as my end result.
 
This thread reminds me of the guy I meet at the last Knob Creek machine gun shoot he was there to buy canned bacon from some seller but I don't remembered the name of the maker
