ENC's Greenville just had the Chef Store open up this week. I just went and they had a lot of primal cuts that we don't have around here. I can break the down further into serving size pieces, but their cost is not cheaper than The Pig or Harris Teeter so I'm wondering is the quality worth the price? Anyone have any opinions, good, bad, ugly? I just don't go to RDU enough to get a costco membership and sam's meats here look sub select despite their naming.

Yall want some flap, butt flap? Lol

I see those are choice, well at least the short ribs, so they are graded higher than the Sam’s select. Most store around here are buying jbs or swift, so it’s luck of the draw of what was in the box. This way you get to go through a lot of primal to get the one that satisfies your eye.

I haven't bought from Chef's here, but certainly did before we left Seattle. Prices there run about 10% less than the regular suppliers, with average to above average cuts.
