I recently discovered the hash knife, or Ula knife, and it is the trick. You can dice an onion or pepper in no time, at all. Joanne just asked me to cut up some cilantro for her. She said she wanted it cut up pretty small. In just a couple of minutes I had it cut up into very small pieces. You're cutting with a rocking motion so you'll need to be careful with your fingers and thumbs (@Burt Gummer) as it would pretty easy to have a mishap. Maybe y'all are experienced with them but I just found out about them and wish I'd known about them sooner.

I bought one years ago in Alaska. I use mine for chopping pork butt too. Excellent kitchen tool. And probably a decent animal skinner if it’s sharp enough.
 
I received one as a gift. I don't know if it was a show piece or an actual working knife. It's in a cabinet somewhere never been used in the 20+ years I've owned it.

I've got a knife like that too. I'm faster with a garden variety chefs knife.
 
I kinda want one now. Or there is this super broad blades cooking knife I’ve seen this out door cool on YouTube using.

I have negligible use for knives. But I want em all nearly as much as I want all firearms.

It would make one heck of a punch in the face, self defense knife too. That handle and grip are perfect for some crazy ass ninja. And it chops and dices veggies. What’s not to like?
