As I was finishing off some left over cheese steak sammie this morning from a little Irish Pub in Durham and washing it down with a strong, hot cup o'joe, I got to thinking about leftovers. For me, there isn't much better than washing down cold leftovers with hot coffee on a Saturday morning - an early Saturday morning, when all is still really quiet and the birds have not yet started to stir. So, what about you, any leftover combos you particularly like?
 
I use any type of leftover roasted or grilled meat in a few different ways - throw tortilla chips on a sheet pan , chunks of meat , cheese , salsa and make nachos- or the same idea in tacos.
Another favorite in cool weather is to use the meat and any veggies to jazz up a bowl of ramen noodles.
 
I’ll put just about any leftover in an omelette or scramble.
 
I rarely eat breakfast, so any leftovers are usually my lunch the next day.

I've also done the nachos thing, as well as an omelette (on weekends).

Sam the cooking guy (on YouTube) has a book of recipes where the goal is intentional leftovers.
 
I like making any meat leftover and taters with an egg on top. If just meat I scramble the eggs with cheese and dill and top with some hot spices.
