Didn't feel like getting out in the drizzle to go to breakfast so...

Chopped up some broccoli, green onions and garlic. Sautéed them in butter with salt, black pepper and a little red pepper flake.

Looks very good. Guess you'll just have to wash it down with straight vodka.
 
2) Didn't have any sausage or bacon thawed.
I run into this sometimes, where I feel like an omelette (I always have plenty of eggs) but don't have any sausage or bacon. I need to pick up a few cans of spam (or corned beef) for these 'emergencies'. Thanks for the inspiration.

I've done a corned beef omlete in the past. Thanks for the reminder! I may have to reprise that.
 
Very nice Don. I do eggs about 3-4 times a week. But mine are far uglier. I just saute some peppers. Usually a poblano and a couple jalapenos. But anaheims or serranos once in a while. Then I usally add some spinach. And being the non conformist I am I just dump the scrambled egg on and finish cooking it all ugly like. I'll add ham also if we have any leftovers in the fridge. Or chicken, turkey or steak. Basically any meat will fly. And instead of salt and pepper I will usually use some spicy barbecue seasoning I always have around. My biggest problem is I usally add too much stuff and the egg to stuff ratio gets thrown off.

I'm upset that you didn't invite me to breakfast, but omelet it slide this time.
xt time you and Tina are up my way, there's a place in Newland that does THE BEST BREAKFAST hands down!!! Guy makes omlets to order with anything you can imagine, have hash browns, biscuits, gravy, fruit, hot cakes, French toast, hell, he makes French toast from a glazed doughnut!!! Homemade salsa, mmmmmmmmm!
 
Why'd you ruin it with Spam?
My dad used to make this sandwich when I was a kid, fried Spam, take a hamburger bun and brown them in oven, put Spam, tomatoes, onion, Velveta cheese and broil in oven until cheese turns brow and bubbly. Put the top on and enjoy!!! Damn, now I'm craving one and I just had a huge Pastromi sandwich!

They leave the lips eyeballs, teeth and Azz holes out of sausage?

Same as the difference btw Andouille, Neese's breakfast, and chorizo--the seasoning! And maybe MSG.
 
No photos, but my omelette recipe:

Grated Gruyere cheese.
Morel mushrooms (sauteed first).
Light sprinkle of diced dill; S&P to taste.

Simple, but good. Those morels impart a great earthy flavour.

You didn't fry the spam first? I'm thinking it would be like fried bologna (yum!). Oh, and Clamato juice with a shot of tabasco & salt & pepper for bloody Mary's. You'll never go back.

Post workout fav - Two eggs, 1/2 cup of egg whites, 4 oz pre-cooked ground beef (with tomatoes), 1/4 cup brown rice and copious amounts of shredded cheese.

i didn't think about it. I'll have to try that next time.

I was making my own Bloody Mary mix for awhile. It was based on Clamato juice.
