Oyster Stew Season

Dad's roommate from NCSU made us oyster fritters and grits when we hunted his farm.
One of the best breakfasts I have ever had.
I love them Any way but fried. Got a bad fried one once, put me off fried oysters ever since.
 
I love the smell and taste of the stew, but violently hate oysters! If you eat them raw, all you need is one and a string, you can eat all day! 🤣😂🤢🤮
 
I've got got a couple quarts of shucked oysters left over from a roast a while back in the freezer, along with a quart of oyster juice. Im putting them to use this weekend.
 
I doubled the portions, did half scallops, added carrots and replaced 1 cup of milk with heavy cream. I’m quite satisfied with how it turned out.

Carrots would be a good addition.

I thought about adding fresh basil for that licorice flavor.

Or cilantro as a garnish.

That’s parsley and green onions. I think cilantro would’ve been better but I really like cilantro.
