I have a friend that runs the local pawn shop. After I got to know him, we were talking one day and he asked me if I liked shrimp. I sounded like Forest Gump's friend, Bubba, when I started saying how much I liked shrimp. As it turns out, my friend has a friend that delivers fresh Gulf Coast shrimp about every other week. All he does is make a list of what people want, calls the guy, he delivers in a couple of days. There are 2 sizes, Medium and Large. The price is $40 for 10 pounds of Medium and $50 for 10 pounds of Large. The shrimp are then deheaded and deveined which brings them down to about 8 pounds of shrimp.

I have bought Mediums only and they are about 20 count shrimp, very nice ones. I take them and put 24-25 shrimp in a freezer bag, fill the bag with water, freeze them. These are some of the best shrimp I've ever had. I have boiled them, grilled them, pan fried them, they always turn out great. Tomorrow evening we'll be having Shrimp n Grits.

That's crazy pricing and a heck of a connection.
Yes, it is. Deheaded and deveined still makes them about $5 per pound. This is the third time I've gotten them and they are the same every time.

We have our own way of making it but, I'm always open to trying something different. We don't use regular old white grits, we use the yellow stone ground grits.
 
I love shrimp. My connection couldn't make it to the coast this year. More than a little disappointed.

Yes putting the shrimp in a freezer bag and filling it with water till covered is the best way to freeze shrimp. Fish does fine vacuum sealed (I freeze a lot of speck trout, drum, and flounder) but shrimp do not. I had a lot of expensive bait a few years back. Old man told me he used to use cardboard milk containers to freeze his shrimp in water with.

For shrimp-n-grits I use no-salt chicken broth for the liquid and then add in a solid cup or so of cheddar (this adds in salt) after cooking to make cheese grits.

My grandpa taught me to freeze freshwater trout in water with a few tablespoons of salt mixed in. He used plastic milk jugs with half the top cut off leaving the handle. Most of what he caught was smaller native trout.
Still remember seeing all those jugs in his freezer with trout tails sticking up! :)
 
Shrimp tacos.

Dust raw shrimp in corn meal. Fry hot and fast.

Flour tortillas.

Finely, and I mean finely, cut raw cabbage and radish. Finely, dammit!

Sauce is equal parts sour cream, mayo, sriracha sauce, with the zest of a lime mixed in.

Tortilla, then sauce, cabbage, radish, shrimp, and drizzled with juice from the lime.

Dang.

CHEESY GRITS​

  • 1 cup quick grits
  • 4 cups water
  • 1/4 teaspoon salt
  • 3 tablespoons butter
  • 2 tablespoons heavy whipping cream
  • 1 1/2 cups shredded sharp cheddar
(I typically add more salt and butter to taste and cream as needed for the consistency that I like)

Shrimp
  • 6 slices smoked bacon
  • 1 pound large shrimp, peeled and deveined
  • 2 teaspoons Cajun seasoning
  • 1/8 teaspoon ground cayenne pepper
  • 1 tablespoon vegetable oil
  • 1 red bell pepper finely chopped
  • 3 green onions chopped
  • 3 cloves garlic minced
  • 1/4 cup low sodium chicken or vegetable broth

INSTRUCTIONS​

  1. Bring the water to a boil; add the grits and salt. Cook for 5-7 minutes or until tender. Remove from heat, stir in butter, cream and cheddar cheese.
  2. In large skillet over medium heat cook bacon until crispy. Place on paper towels to drain; reserving bacon grease. Coarsely chop bacon once cooled. Add shrimp to bacon grease over medium heat. Sprinkle with Cajun seasoning and cayenne pepper. Flip shrimp after one minute; and cook for additional one minute. Remove to plate.
  3. Add vegetable oil to skillet over medium heat. Add red pepper and cook until slightly tender; 2-3 minutes. Reduce heat to medium low. Add green onions and garlic and cook for 1 minute. Add chicken broth to skillet and stir. Return shrimp and bacon to the skillet and heat for 1 minute.
  4. Spoon shrimp mixture over grits, serve immediately.

I’ve only ever had the ones that she makes. But I can’t imagine them getting any better

That's awesome, and the pricing is stupid good. Your boy probably has a direct connect. Fresh NC/SC shrimp 21/25 run about 7-8/lb from lowcountry shellfish. IQF are 5.95/lb I think.
