What should you do with leftover ribs?

Made 4 racks of ribs Sunday. That was a might too many. They were good though.

So tonight I cut all meat off the bones and then decided to make myself a grilled rib-n-cheese.

Heated the meat up in the microwave with some extra bbq sauce and then stirred in shredded cheddar and heated that up to melt the cheese while I melted some butter in the skillet.

About 2 minutes on each side. It didn’t suck.

Could have used some cheap pork butt for that..

No way I’m using smoked meat sticks with a man handle in a frickin cheese sandwich..
damn sure ain’t ‘left over’ ribs. I’ll go comatose first. Cold dead hands and all that.
 
Well lads. Based on where I am right now I could have saved time if I’d just dumped that sammich in the toilet.

I usually use sausage, but rib meat would be good in barbecue spaghetti. If you haven‘t tried it give it a whirl. Although my family doesn’t really get it. They think spaghetti has to have marinara or traditional bolognese. But if you like red b‘cue sauce, spaghetti with sausage or rib meat works well. Serve with corn bread instead of Italian or French bread. Word of caution; it doesn’t take as much b’cue sauce as it would marinara since the flavor is more bold.
 
Makes a good quesadilla too! Shred or cut the meat into smaller pieces. Fry up some sweet onions for ~ 20 min on low/med heat so they start to brown then toss the meat in at the end to heat it up. make/buy some spicy queso dip/sauce, mix in some cheddar and spicy jack, put the mix on a tortilla and top with another tortilla with some light oil and fry both sides to get some crunch and melted cheese.
 
Reviving this thread. Did the same today, four rack of ribs. I bought one and my mother waxed on about having some in the freezer. So I made those too, but it turns out there were three racks in that pack. A Memphis rub from Meatheads amazing ribs (another thread), six hours in the pellet smoker, a little sauce under the broiler for a few minutes. Damned good ribs.

Now, we have two racks to eat as left overs. Ugh.

Eat them hunched in your boxers in front of the open fridge at 3am, duh.
I just ate a cold smoked chicken thigh this way. It's not 3 am, and I'm not in my boxers, but I am drunk so there is that.
