What's for dinner?

Some marinated chicken for supper. And some country ham to put in some leftover biscuits for lunch tomorrow.

My biggest concern was the package of ham said cook to an internal temp of 160°…and I couldn’t for the life of me figure out how to get a thermometer into that slide of ham. 😳🤔

Rabbit over rice.

Browned rabbit quarters with off brand Tony's seasoning, removed and made a rue. Then added onion, garlic and celery. 1/2 gallon of chicken stock. Added rabbit back to and simmered for about hohr- hour and half. Forgot.

Made rice.

Removed quarters, pulled bones and added meat back to stock.

Added flour thickener.

Took to church for our annual "wild game dinner".

Also had Bear, gator, squirrel, frog, chicken, deer, shrimp and plenty of side and dessert. Thoroughly stuffed with extras in fridge.

Lengua tacos and homemade rojo tomatillo salsa.

Salsa was ok and meat was good, just need to make them a few more times to perfect. Mainly need to work on salsa and meat seasoning when frying in pan. Tbh first time making both, both still delicious. Salsa burnt (from frying onions/garlic/peppers too long) live and learn on salsa making. Lengua meat cooked great, tender+juicy, just needed better seasoning fir frying.
 
Running the old standby today. Daughter wanted corned beef, cabbage and mashed taters. Gonna braise the corned beef in beer for 3-4 hours. It falls apart then and tastes wonderful. Amazing how many folks I’ve fed that to that “don’t like” corned beef. May add a salad for something different and to cut the fat/salt of the meat. Will post pics when we plate!

Tonight was grilled chicken thighs with grilled red peppers and onions. Veggies were seasoned with my go-to “sauce” - butter, garlic, oregano, pepper, lemon, and anchovy paste. Doesn’t taste fishy at all, I could put that stuff on everything.

Grilled a few random meats, nobody in my house will just eat anything, cept me... so theres chicken legs, salmon burgs, strip steaks, cheddar brats, city chicken, cheddar bacon meatballs, and filets for the wife and i... what doesnt get eaten turns in my lunches, so i tend to go overboard quite a bit.

This crew at cff hasnt known you as long as I have. I know from years of grill pics this is what your meals look like 8 days a week 🤣 looks like a slow night from some of your older pics 👍
 
Starting to cut carbs again. Don’t mind it too much until I’m working all day in the field and miss my sandwiches, or crave pizza and fries. Otherwise I do ok. Filet, shrimp, sautéed shrooms, bacon wrapped asparagus, and baked cauliflower. Turned out good, except i overcooked the steaks cause i was watching too many other things. Daughter made herself some homemade potato chips in the air fryer.

Cereal works...Nothing like cereal for supper. At least I'm not the only one Berries Special K, Frosted mini wheats, Corn Flakes with fresh strawberries or banana, or strawberry n creme oatmeal, plain oatmeal with honey (local guy I know daughter has bees) or grits with cheese n honey with scrambled eggs. When i would go to Key West, grits / cheese / crawfish...some cuban bread (for dinner)

Its breaded strips/cubes of pork on skewers. Theyd normally get pan fried in butter.
Thanks for the clarification on "city chicken". was wondering myself. We just consider it (pork) the "holy" animal... LOVE me some pig and so many things to do with it and ways to enjoy it!

As for Cereal for supper...meh, now "breakfast" for supper (eggs, various pork products...country ham/sausage..., gravy, biscuits, redeye gravy) DEFINITELY, though I'd also be in for the Key West meal! Never sub'ed the mudbug for shrimp. Will definitely have to try that.

First time for me was like, I dont know about this. But them Key West "natives" (my moms side of the family) could "hook-up" some food. Them crawfish just did something taste wise, some sharp cheddar cheese, man... when I go down there its all about seafood and Cuban food

On a sudden whim last Sunday, I wanted something out of the ordinary for a small dinner and recalled we have several cases of Ramen noodles in the basement, from hiking purchases and the pandemic stockpile. I got the oldest ones out ("best if used by 04132013") and found "TikTok Ramen" on the Internet. What really drew me to this one was how little I would need to get at the grocery store (Scallions) and every other single ingredient we had in the fridge or cabinets. There were many recipes of course and some looked way better in the end, but this would require almost nothing else. The first recipe I found didn't even mention exact amounts of ingredients, so I estimated. I did okay, but used like a teaspoon of brown sugar whereas I found later that another suggested TWO TABLESPOONS. The batch Sunday night was still good, but I made it again Tuesday as we liked it so much (and it was so cheap!) and the batch last night was VERY GOOD. I'm getting better clearly (AND used the right amount of ingredients!) Also I had never heard of or had the "Everything Bagel" seasoning. Man! That stuff is the bomb!

Late but decent meal tonight. Overcooked the pork roast as we were eating WELL past our usual time. Got delayed by work. Bacon wrapped pork roast, fresh collards and cauliflower. Daughter made herself a mashed potato. I tossed my collards and cauliflower in my homemade buffalo sauce/salad dressing. TASTY!

Rendered some pork fat a buddy gave me and tossed the greens in on top of that to cook for several hours.
