Pickles?

My wife makes a 21 day sweet pickle that is great. Doesn't compare to any store bought sweet pickle.

She also does dill pickled green beans that are great also.

Bread n butter too.

We eat just about anything pickled, except beets. My mother loves them, but I can't stand them.

Depends.

I like Vlassic Kosher Dills, but will take whatever is available if they don't have those.

For general munching, whole dills are the bomb. Spears if they don't have whole dills. For sammiches, chips.

Same goes for relish...I like the dill relish (my wife learned while we were dating that they actually make dilled relish, something I was surprised she didn't know).

For munching, I generally like medium sized ones over large. Better crunch.
 
So I’ve noticed that we have several folks here that are talking about their (or their Mrs) homemade pickles. I think we need to get all these homemade pickles together and let’s just see who’s got the best. I’ll take one for the team, and volunteer to be a taste tester [emoji16]

Store bought, I like the claussen dill straps for sandwiches.

I keep the jar of the pickle juice once all the pickles are gone. I drink a small cup of it about once a week and when your are hot and thirsty after being outside working, nothing quenches my thirst better than a big glass of that juice.
 
My mom puts up about 60 jars of pickled okra per year. My wife eats most of those jars.

She'll pair them with anything

Hot dogs? Pickled okra
Bagel? Pickled okra
Watermelon? Pickled okra
Grilled Cheese? Pickled okra
Chinese? Pickled okra
Symphony Bar? Pickled okra


I usually just put them in a Bloody Mary.
Second the blood Mary and Miller Lite and Tomato juice.
 
So I bought a tub of the Grillos pickles. Different style than most others. More fresh from the field taste and very dilly. I'm half way through and pretty split on them, I wouldn't say dislike but not exactly one I like. I'll eat them but probably won't buy again.
 
For commonly available, Clausen dills hands down. Love the sanwich slices in just about any sammich.

My GF pickles okra, etc. but the best was when she pickled garlic skapes. Skapes are the shoots from the top of the plant that are ready a month or so before the actual garlic heads are and have a nice mild garlic flavor. She won first place with those in a pickle contest at the Chapel Hill farmers market where she sells under Wild Dog Farm.

The brewery down the road, Royal Bliss, does their pickles a certain way that I can't put my finger on. They're really good, I just don't have the words to describe them. Horseradishy? Not sure.

Edit- yea horseradishy is what they are. I can't eat a bunch, but I do enjoy a few.

I was inspired to try and find some of the pickles posted here that I haven't had yet. Didn't find any, but I did find some others.

Vlasic Tabasco Kosher Dills. Dill pickle spears and spiced with Tabasco. They're OK, but didn't come across like I thought they would. Definitely spicy though, which is good, but the pickles themselves could have been crunchier for my preference. They would be better if they were whole dills in my opinion, baby dills especially...the crunch factor would be a lot better. If I was in the mood for this flavor again, I'd buy them.

Wickles Dirty Dill Baby Dills. Whole baby dills with the whole pickle crunch I like. Lightly spicy, with a small bite to them, which isn't overpowering. A good balance, in my opinion, allowing the flavor to come forth without being overpowered by the heat. Garlic, chili pepper, tumeric extract. I'd buy these again.

Wickles Original Pickles. Sliced about 3/8" thick, Dried garlic, red chili peppers, tumeric, and an interesting blend of dill and sweet to my taste. Now, I don't really care for sweet pickles as a rule but these have a very interesting flavor I've never run across before. They're more on the sweet side with just a touch of dill. and just enough spicy to enhance the flavor. Not all that crunchy. I would definitely buy these again, and that's coming from someone who doesn't care that much for sweet pickles.

I found all these at a Walmart.
 
I decided to dip my toe in the water. Just put these up a few days ago, first batch ever. I'm waiting until 9/16 to try them out and see how I want to tweak the recipes.

Horseradish leaves, like grape leaves, have tannins in them that make pickles crisper. Maybe they add some of the root too.

I learned a few things:
1) Time is important. I started testing @ 3weeks in, but they were much better after 8 weeks. Early on they just tasted vinegar-y, later they took on more of the flavor from the other ingredients. I don't know what they would have tasted like after another month because they only made it to 8 weeks.
2) I used distilled white vinegar at a 60/40 vinegar/water ratio. Again, they were too vinegar-y for me. I'm going to try AC vinegar at 50/50 next time.
3) You can't use too much of the flavoring agents. They are slow to transfer into the eggs, and the effect is small.
4) I learned that I like my brine-pickled jalapeños better than the eggs. The peppers out of that jar of eggs are pretty damn good.
 
I must try these, right up my alley.

Can’t speak for your area…but my wife has been buying hers at Harris Teeter here in Charlotte. She enjoys them and also says they’re “clean” as far as added ingredients/chemicals go. No preservatives, dye, or added sugar.

I got my hands on them, a bit too sweet for my taste.
 
I was at the store today really looked around and it got me thinking... Out of the commercially available kinds of pickles what do yall like?

What brand? Mount Olive, Heinz, Clausens etc?

What flavor? Kosher dill, dill, sweet, bread and butter etc?

What cut? spears, chips, large whole, medium hole, gurkins?

Anyone find any specialty brands that are worth a try?


I personally prefer the Mount Olive, Kosher Dill, in the medium whole packing.
