Diced potato with diced peppers added in, bacon, and 2 eggs over easy. That's my standard breakfast these days. I've been working on a quick breakfast I can do while I'm getting ready for work. I've got it down to 15 minutes.
Pre-cooking prep work, I take a 2 lb pack of thick cut bacon, slice it in half, and then lay it out on wax paper in cookie sheets and put it in the freezer to freeze, once its frozen I bag it up with the wax paper separating the pieces.
Start with some frozen diced potatoes from Ingles, a frozen diced pepper mix, cover the bottom of my air fryer with potatoes and peppers, put 4-5 pieces of the frozen bacon (2 - 2 1/2 whole slices) on top of the potatoes and set the air fryer for 15 minutes at 400 degrees. I grab a quick shower, at the 13-14 minute mark start up the eggs, plate the potatoes and bacon, little salt on the potatoes and either just a tiny bit of salsa or ketchup on them. Check the eggs, once they're done I throw them on top of the potatoes, break the yolks so they soak into the potatoes and place the plate on top of the pan I was cooking eggs in (flame turned off), it keeps it hot while I get dressed and sets the yolk into the potatoes some.
I can do the same thing with frozen sausage patties or links, I've done ham steaks (start from frozen) that way, breakfast steaks, kilbasa, even cooked some liver mush that way. Just have to watch it a little more carefully with the steak and livermush. I love my air fryer, I cook something in it at least once a day, it's easily the best purchase for the kitchen I've made in years.
