Fast is over!!! We sponsor a girl in Ecuador so tonight we are making pescado encocado. Bought some fresh “local” grouper today for the fish. Larry at Shrimp Mate was a great guy to buy from. Will again for sure!!

Here is what is should look like. Recipe below pic but no plantains for us.

The wife's leftover from dinner with our sons family at mayflower. Child's shrimp plate. I worked late so I didn't get to go.

Grilled some burgers for guests. One of the guest required turkey burgers. I did a few extra so I could try one. It was not bad. Then I had a regular burger and was immeaditely reminded of how much better they are then turkey.
 
To reduce our factory farm animal impact, we are doing vegetarian weekday meals ... weekends are ethically sourced animals from local farms ($$$). Tonight, vegan sloppy Joe’s. They were about as good as you’d guess...

ETA: One benefit of near coast living... weekday vegetarian doesn’t exclude fresh caught shrimp. Got these this weekend and prepping them for tomorrow. Almost makes up for the “sloppy Joe’s....

Pretty simple:

Tuna filets marinaded in soy sauce; a little lime juice; and ginger. Quick cast-iron skillet sear using just a bit of peanut oil. Jasmine rice and an array of fresh veggies.
 
I still haven't bounced back to 100% and didn't feel like firing the grill up, so, it's gonna be stovetop stew.

Doing some brats now for lunch. Taking a break from cutting up the downed trees. Tonight at some point I have a chicken and cajun sausage dish planned as well. If weather allows it might all get done over the fire pit coals tonight in cast iron.
